I don't know about you but when the Holidays roll around my blood pressure goes up! I don't know if its the excitement of the season or the pressure I feel to get everything done. So to help you from feeling the stress that seems to effect many of us I have a make ahead mashed potato recipe that can be made up to 3 days before the event.
Make Ahead Mashed Potatoes
8 lbs potatoes, peeled and cut into pieces
Boil the potatoes until fork tender
1 pkg. cream cheese 8 oz.
1/4 cup sour cream
salt and pepper to taste
Butter
Paprika
Mash boiled potatoes. Add sour cream and chram cheese, salt and pepper mixing well. Put mixture into a greased casserole dish. Top with pats of butter. May be stored in the refridgerator for several days. Before serving sprinkle with paprika and bake uncovered in a 350 degree oven for 30 to 35 minutes.
8 servings.
